Chef Forti visited the empress of the Jo’burg restaurant scene, Emma Chen, at her extraordinary PRON restaurant, on DEKATv’s episode 8, and together they prepared a sumptuous Wood Ear Salad.

You will need:

Wood ear mushroom, 150g

Red onion, half

Fresh red chili, half

Sichuan peppercorn, 5 g

Dry chili, 2 pieces

Rice vinegar, 10 ml

Soya sauce, 10 ml

Fresh coriander leaves, 20 g

Sunflower oil, 20 ml

Sesame oil, a few drops

Salt flakes to taste



Rinse and Soak Wood ear for 2 hours in lukewarm water until soft.

Blanch Wood ear and rinse with cold water, drain, break into large pieces.

Crush dry chili into fine pieces.

Roughly chop coriander .

Thinly slice red onion and fresh red chili.

Heat oil in a pan, throw in dry chili and Sichuan peppercorn, wait for fragrance then remove from heat.

Mix Wood ear, onion, fresh chili and coriander in a bowl. Pour in the fragrant oil (without the chili and peppercorn pieces), add vinegar, soya sauce and sesame oil, salt to taste.

Serve immediately.
